  • 0.5 cups Cocoa powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 3 large Ripe bananas
  • 0.75 cup Coconut sugar
  • 1 teaspoon Vanilla extract
  • 0.5 cup Unsweetened almond milk
  • 0.25 cup Coconut oil
  • 1 teaspoon Apple cider vinegar
  • 0.5 cup Vegan chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan with a little coconut oil or line with parchment paper.

Step 2

In a large bowl, combine the all-purpose flour, cocoa powder, baking soda, baking powder, and salt. Mix well to combine.

Step 3

In another mixing bowl, mash the ripe bananas using a fork or potato masher until smooth.

Step 4

Add the coconut sugar, vanilla extract, almond milk, melted coconut oil, and apple cider vinegar to the mashed bananas. Stir until well combined.

Step 5

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.

Step 6

Fold in the vegan chocolate chips until evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Step 9

Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Step 10

Once cooled, slice and serve as is or with a dusting of powdered sugar or drizzling with a simple vegan chocolate glaze, if desired.
