Ingredients

  • 4 pieces large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup green onions (scallions), chopped
  • 0.25 cup nutritional yeast
  • 0.5 cup vegan sour cream
  • 0.5 teaspoon garlic powder

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Wash and scrub the russet potatoes thoroughly to remove any dirt. Pat them dry with a paper towel.

Step 3

Using a fork, poke several holes around each potato to allow steam to escape during baking.

Step 4

Brush each potato with olive oil to coat the skin evenly. Sprinkle the potatoes with salt and ground black pepper.

Step 5

Place the potatoes directly on the middle oven rack, and bake for about 60 minutes, or until the potatoes are tender when poked with a fork.

Step 6

While the potatoes are baking, prepare the toppings. Finely chop the green onions and set aside.

Step 7

Once the potatoes are cooked through, remove them from the oven and let cool for a few minutes. Carefully cut a slit lengthwise on each potato and gently squeeze the sides to open the potato slightly.

Step 8

Fluff the potato flesh using a fork and add a dollop of vegan sour cream into each potato.

Step 9

Sprinkle nutritional yeast and garlic powder over the potatoes for extra flavor.

Step 10

Top each potato with chopped green onions and serve immediately while warm.
