Ingredients

  • 200 grams Firm tofu
  • 2 tablespoons Nutritional yeast
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Black salt (Kala Namak)
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 medium Avocado
  • 1 cup Spinach leaves
  • 1 medium Tomato
  • 1 tablespoon Dijon mustard

Directions

Step 1

Press the tofu block with a clean kitchen towel or paper towels to remove excess moisture, then crumble it into small pieces resembling scrambled eggs.

Step 2

In a bowl, mix the crumbled tofu with nutritional yeast, turmeric powder, black salt, and black pepper until well combined.

Step 3

Heat olive oil in a non-stick skillet over medium heat. Add the tofu mixture and cook for 5-6 minutes, stirring occasionally, until the tofu is heated through and slightly crispy. Remove from heat and set aside.

Cut the bagels in half and toast them until golden brown and crispy.
