Ingredients

  • 8 oz tempeh
  • 1 tsp smoked paprika
  • 2 tbsp soy sauce or tamari (for gluten-free)

  • 1 tsp garlic powder
  • 4 large flour tortillas
  • 2 cups cooked brown rice
  • 2 tbsp lime juice
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, shredded
  • 0.5 red onion, thinly sliced
  • 0.5 cup vegan ranch dressing
  • 1 tbsp olive oil

Directions

Step 1

Slice the tempeh into thin strips.

Step 2

In a bowl, mix together smoked paprika, soy sauce, maple syrup, and garlic powder. Add the tempeh strips and marinate for at least 10 minutes.

Heat olive oil in a large skillet over medium heat. Add the marinated tempeh strips and cook for 3-4 minutes on each side until crispy and golden brown. Remove from the skillet and set aside.
