Ingredients

  • 4 slices Sourdough bread slices
  • 8 slices Vegan bacon
  • 4 slices Vegan gouda cheese
  • 4 tablespoons Vegan mayonnaise
  • 1 medium Tomato
  • 1 cup Arugula leaves
  • 2 tablespoons Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat a non-stick skillet over medium heat.

Step 2

Add the olive oil to the skillet. Once hot, lay the vegan bacon slices flat in the skillet. Fry them for 3-4 minutes on each side until crispy. Remove from the skillet and set aside.

Step 3

In the same skillet, lightly grease if needed, and toast the sourdough slices on one side until golden brown, about 2-3 minutes. Remove from the skillet.

Step 4

Slice the tomato into thin rounds and set aside.

Step 5

On the untoasted side of each sourdough slice, spread 1 tablespoon of vegan mayonnaise evenly.

Step 6

Lay a slice of vegan gouda cheese on two of the slices, followed by 4 slices of crispy vegan bacon on each.

Step 7

Add a few rounds of sliced tomatoes and about 1/2 cup of arugula leaves on top of the bacon slices.

Step 8

Sprinkle with a little salt and black pepper.

Step 9

Top with the remaining slices of bread, toasted side up, gently pressing them down.

Step 10

Optionally, you may place the assembled sandwich back in the skillet and cover for a minute to slightly melt the cheese.

Step 11

Slice the sandwiches in half and serve immediately.
