  • 1 tablespoon Olive oil
  • 1 small Avocado
  • 6 pieces Cherry tomatoes
  • 1 cup Baby spinach
  • 2 tablespoon Vegan mayonnaise
  • 0.5 tablespoon Lemon juice

Directions

Step 1

Start by preparing the tofu scramble. Drain the tofu and pat it dry with a paper towel. Crumble the tofu into a bowl with your hands until it resembles scrambled egg texture.

Add turmeric powder, nutritional yeast, garlic powder, salt, and black pepper to the crumbled tofu. Mix well to combine.
