  • 4 large Nori sheets
  • 2 large Ripe avocados
  • 1 medium Cucumber
  • 1 medium Carrot
  • 0.5 cup Vegan mayonnaise
  • 2 tablespoons Sriracha sauce
  • 0 optional, for serving Soy sauce

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil over medium-high heat.

Reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.
