Ingredients

  • 2 medium ripe avocados
  • 240 grams all-purpose flour
  • 10 grams baking powder
  • 2 grams baking soda
  • 2 grams salt
  • 150 grams coconut sugar
  • 120 ml unsweetened almond milk
  • 60 ml coconut oil
  • 5 ml vanilla extract
  • 15 ml lemon juice
  • 15 grams chia seeds
  • 45 ml water
  • 60 grams chopped walnuts

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9x5 inch loaf pan or line it with parchment paper.

Step 2

In a small bowl, combine the chia seeds and water. Stir well and let it sit for about 5-10 minutes, until it forms a gel-like consistency.

Step 3

Cut the avocados in half, remove the pits, and scoop the flesh into a large mixing bowl. Mash the avocados using a fork or potato masher until smooth.

Step 4

Add the coconut sugar, almond milk, melted coconut oil, vanilla extract, and lemon juice to the mashed avocados. Mix until all the ingredients are well combined and the mixture is smooth.

In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
