Ingredients

  • 1 medium Carrot
  • 100 grams Green beans
  • 1 stick Drumstick
  • 100 grams Yam
  • 1 medium Potato
  • 100 grams White pumpkin
  • 2 tablespoons Coconut oil
  • 1 cup Coconut, grated
  • 2 small Green chili
  • 1 teaspoon Cumin seeds
  • 10 leaves Curry leaves
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 1 cup Water

Directions

Step 1

Peel and cut all vegetables (carrot, green beans, drumstick, yam, potato, white pumpkin) into 2-inch long strips.

Step 2

In a large pot, add the cut vegetables, 1 cup of water, turmeric powder, and salt. Cover and cook on medium heat for 10-12 minutes, stirring occasionally, until the vegetables are tender but not mushy.

Step 3

While the vegetables are cooking, prepare the coconut paste by blending grated coconut, green chilies, and cumin seeds into a coarse mixture using a little water if necessary.

Step 4

Once the vegetables are cooked, reduce the heat to low and add the coconut paste to the vegetables. Mix well to combine.

Step 5

Add curry leaves and drizzle the coconut oil evenly over the mixture. Gently mix again.
