  • 2 cups dried pinto beans
  • 2 tablespoons olive oil
  • 1 medium, chopped white onion
  • 4 minced garlic cloves
  • 3 medium, diced tomatoes
  • 1 medium, diced green bell pepper
  • 1 seeded and minced jalapeño pepper
  • 6 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 0.5 cup, chopped fresh cilantro
  • 1 sliced into wedges lime
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon, or to taste black pepper

Directions

Step 1

Rinse the dried pinto beans under cold water and remove any debris or bad beans.

Step 2

Place the beans in a large pot and cover with water. Allow them to soak overnight or for at least 8 hours.

Step 3

Drain and rinse the soaked beans, set them aside.

Step 4

In the same pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic and continue to cook for another 1-2 minutes, until fragrant.
