Ingredients

  • 180 grams rolled oats
  • 60 grams whole wheat flour
  • 1 teaspoon baking powder
  • 2 tablespoons chia seeds
  • 50 grams shredded unsweetened coconut
  • 100 grams dried apricots
  • 100 grams dried figs
  • 50 grams raisins
  • 60 grams sunflower seeds
  • 60 grams pumpkin seeds
  • 120 milliliters maple syrup
  • 60 milliliters coconut oil
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tray or line with paper liners.

Step 2

In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, chia seeds, and shredded coconut.

Step 3

Chop the dried apricots and figs into small pieces and add them to the bowl along with the raisins, sunflower seeds, and pumpkin seeds. Mix well to ensure all ingredients are evenly distributed.

Step 4

In a small saucepan over low heat, melt the coconut oil. Once melted, remove from heat and add the maple syrup and vanilla extract. Stir well to combine.

Step 5

Pour the wet mixture over the dry ingredients and stir until everything is well coated and begins to stick together.
