Ingredients

  • 2 medium aubergines (eggplants)
  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Slice the aubergines in half lengthwise and place them cut side down on the prepared baking sheet.
