Ingredients

  • 1.5 cups Long-grain white rice
  • 1.5 cups Cooked black beans (drained and rinsed)
  • 2 tablespoons Coconut oil
  • 1 Small onion, diced
  • 3 Garlic cloves, minced
  • 2 Bay leaves
  • 1 teaspoon Cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Vegetable broth
  • 1 tablespoon White vinegar
  • 0.25 cup Fresh cilantro, chopped
  • 1 Lime, cut into wedges

Directions

Step 1

Rinse the rice under cold water until the water runs clear, then set aside to drain.

Step 2

In a large saucepan, heat coconut oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Step 3

Add the minced garlic, bay leaves, cumin, oregano, salt, and black pepper. Sauté for another 2 minutes until the spices are fragrant.
