In a medium saucepan, bring 1.5 cups of water to a boil.
In a large mixing bowl, combine yuca flour, salt, and nutritional yeast.
Gradually add the boiling water to the bowl while stirring continuously, until the mixture becomes a smooth dough.
Knead the dough lightly with clean hands for 2-3 minutes until it firms up. If the dough is too sticky, add a little more yuca flour.
Mix in the chopped scallions and cilantro into the dough.
Divide the dough into 8 even pieces and shape each piece into a ball. Then flatten each into a disc about 1/2 inch thick.
In a large skillet, heat olive oil over medium heat.
