Ingredients

  • 2 cups Fresh sweet corn kernels
  • 1 cup Cornmeal (preferably yellow)
  • 0.5 cup Coconut milk
  • 0.5 cup Vegan cheese, shredded
  • 2 tablespoons Coconut sugar
  • 1 teaspoon Salt
  • 1 teaspoon Baking powder
  • 2 tablespoons Vegetable oil (for cooking)

Directions

Step 1

Start by preparing the sweet corn kernels. If you are using fresh corn, slice the kernels off the cob with a sharp knife.

Step 2

In a blender or food processor, combine the corn kernels and coconut milk. Blend until a mostly smooth mixture forms, with some texture still present.

Step 3

In a large mixing bowl, combine the cornmeal, coconut sugar, salt, and baking powder. Mix these dry ingredients well.

Step 4

Pour the blended corn mixture into the bowl with the dry ingredients. Stir in the shredded vegan cheese. Mix until the batter is evenly incorporated and slightly thick.

Step 5

Heat a tablespoon of vegetable oil in a non-stick skillet over medium heat.

Step 6

Spoon a portion of the batter onto the skillet to form a small round patty, about 4 inches in diameter.

Step 7

Cook for about 3-4 minutes on each side, or until the arepas are golden brown and slightly crispy on the edges.

Step 8

Repeat the cooking process with the remaining batter, adding more oil to the skillet as needed.

Step 9

Serve the arepas warm, paired with vegan butter or avocado slices for a satisfying meal.
