Ingredients

  • 500 g Colocasia root (arbi)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 medium, finely chopped Onion
  • 1 medium, finely chopped Tomato
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons, chopped Cilantro leaves
  • 1 tablespoon Lemon juice

Directions

Step 1

Wash the colocasia roots thoroughly to remove any dirt or grime. Boil them in a pot with enough water to cover the roots. Cook until they're tender but not mushy, approximately 8-10 minutes. Drain and let them cool slightly.

Step 2

Once cooled, peel the skin off and cut into thick slices or rounds.

Step 3

In a large pan, heat vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds until fragrant.

Step 4

Add finely chopped onions and sauté until they turn golden brown.

Step 5

Mix in the ginger and garlic paste, sauté for another minute until the raw smell disappears.

Step 6

Add chopped tomatoes and cook until they soften and the oil starts to separate from the mixture.

Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for another 2 minutes.

Add the boiled and sliced colocasia to the pan. Mix well with the spices and cook for about 5-7 minutes, allowing the flavors to blend and the colocasia to get a bit crispy.

Sprinkle garam masala over the top and toss everything gently.

Turn off the heat and garnish with chopped cilantro leaves and a drizzle of lemon juice before serving.
