Ingredients

  • 2 sheets Vegan puff pastry sheets
  • 3 medium Apples
  • 50 grams Brown sugar
  • 1 teaspoon Ground cinnamon
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 2 tablespoons Almond milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar

Directions

Step 1

Preheat the oven to 200°C (390°F).

Step 2

Peel, core, and thinly slice the apples and place them in a large bowl.

Step 3

Add the brown sugar, ground cinnamon, lemon juice, and cornstarch to the apples. Mix until the apples are well coated.

Step 4

Roll out the vegan puff pastry sheets on a lightly floured surface to smooth the creases, if necessary.

Step 5

Cut each puff pastry sheet into 4 equal squares.

Step 6

Place a spoonful of the apple mixture in the center of each pastry square.

Step 7

Fold each square into a triangle by bringing one corner over the filling to the opposite corner, then press the edges together to seal the pastry.

Step 8

Crimp the edges with a fork to ensure they are sealed.

Step 9

Place the pastries on a baking sheet lined with parchment paper.

Step 10

Mix the almond milk and vanilla extract together in a small bowl.

Step 11

Brush the tops of the pastries with the almond milk mixture to help them brown.

Step 12

Bake in the preheated oven for 20-25 minutes or until the pastries are golden brown and puffed.

Step 13

Remove from the oven and allow them to cool slightly on a wire rack.

Step 14

Before serving, dust the pastries with powdered sugar.
