Ingredients

  • 2 cups Rolled oats
  • 0.5 cup Almond flour
  • 2 tablespoons Ground flaxseed
  • 5 tablespoons Water
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 0.75 cup Unsweetened applesauce
  • 0.5 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup Chopped apples
  • 0.25 cup Raisins (optional)
  • 0.25 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

Step 2

In a small bowl, combine the ground flaxseed and water. Stir well and let it sit for about 5 minutes until it thickens to form a flax 'egg'.

Step 3

In a large bowl, mix together the rolled oats, almond flour, baking powder, cinnamon, and salt.

Step 4

Add in the thickened flaxseed mixture, unsweetened applesauce, maple syrup, and vanilla extract. Stir until everything is well combined.

Fold in the chopped apples, and if using, the raisins and chopped nuts.
