  • 0.75 cup Almond milk (or any plant-based milk)
  • 1.5 cups Apples, peeled and chopped
  • 1 tablespoon Lemon juice
  • 0.5 cup All-purpose flour (for topping)
  • 0.5 cup Rolled oats (for topping)
  • 0.25 cup Brown sugar, packed (for topping)
  • 0.5 teaspoon Cinnamon, ground (for topping)
  • 0.25 cup Coconut oil, solid (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.

Step 2

In a large mixing bowl, combine 1.5 cups of all-purpose flour, 1 cup of rolled oats, 0.5 cup of packed brown sugar, 1.5 teaspoons of baking powder, 0.5 teaspoon of baking soda, 0.5 teaspoon of salt, and 1 teaspoon of cinnamon. Mix well.
