Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
In a large mixing bowl, combine 1.5 cups of all-purpose flour, 1 cup of rolled oats, 0.5 cup of packed brown sugar, 1.5 teaspoons of baking powder, 0.5 teaspoon of baking soda, 0.5 teaspoon of salt, and 1 teaspoon of cinnamon. Mix well.
In another bowl, whisk together 0.5 cup of unsweetened applesauce, 0.25 cup of melted coconut oil, and 1 teaspoon of vanilla extract.
