Ingredients

  • 240 ml apple cider
  • 120 ml unsweetened applesauce
  • 60 ml coconut oil (melted)
  • 150 g brown sugar
  • 1 tsp vanilla extract
  • 300 g all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt
  • 60 ml almond milk (or other plant-based milk)
  • 100 g powdered sugar

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a doughnut pan.

Step 2

In a small saucepan, bring the apple cider to a boil, then reduce the heat and simmer until it has reduced to about 120 ml (1/2 cup), approximately 10 minutes. Allow it to cool.

Step 3

In a medium bowl, combine the cooled apple cider reduction, applesauce, melted coconut oil, brown sugar, and vanilla extract, whisking well until smooth.

In a separate large bowl, sift together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.

Gradually add the wet ingredients to the dry ingredients, stirring well after each addition to form a smooth batter. Add the almond milk to adjust the consistency if needed.
