  • 2 teaspoons Baking powder
  • 100 grams Cane sugar
  • 0.5 teaspoons Salt
  • 1 teaspoons Vanilla extract
  • 120 ml Unsweetened applesauce
  • 120 ml Soy milk (or any plant-based milk)
  • 60 ml Coconut oil, melted
  • 1 tablespoons Lemon juice
  • 3 medium Apples (such as Granny Smith or Honeycrisp)
  • 1 teaspoons Cinnamon
  • 2 tablespoons Brown sugar

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch (23cm) springform pan with a little coconut oil.

Step 2

In a large mixing bowl, sift together the all-purpose flour and baking powder. Add cane sugar and salt, and whisk to combine.

In another bowl, mix the vanilla extract, unsweetened applesauce, soy milk, melted coconut oil, and lemon juice until well combined.
