Ingredients

  • 250 g All-purpose flour
  • 2 tsp Baking powder
  • 0.5 tsp Baking soda
  • 0.25 tsp Salt
  • 100 g Vegan butter
  • 150 g Granulated sugar
  • 100 g Unsweetened apple sauce
  • 1 tsp Vanilla extract
  • 60 ml Plant-based milk
  • 150 g Confectioners' sugar
  • 1 tbsp Lemon juice

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream the vegan butter and granulated sugar until light and fluffy.

Step 4

Add the unsweetened apple sauce and vanilla extract to the butter-sugar mixture and mix until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the plant-based milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.

Using an ice cream scoop or two spoons, place dollops of dough onto the prepared baking sheet, leaving about 5 cm (2 inches) between each portion.
