Ingredients

  • 3 medium potatoes
  • 3 tablespoons canola oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon ground coriander
  • 0.5 teaspoon garam masala
  • 0.5 teaspoon amchur (dried mango powder)
  • 1 teaspoon salt
  • 1 finely chopped green chili
  • 1 inch piece, grated ginger
  • 1 large, chopped tomato
  • 2 tablespoons, chopped fresh cilantro
  • 1 tablespoon lemon juice

Directions

Step 1

Peel and cube the potatoes into bite-sized pieces.

Step 2

Heat canola oil in a pan over medium heat. Add mustard seeds and let them splutter.

Step 3

Add cumin seeds and sauté for a few seconds until aromatic.

Step 4

Add grated ginger and chopped green chili, sauté for about a minute.

Step 5

Add the chopped tomato, cook until it becomes soft and oil separates from the mixture.

Step 6

Stir in turmeric powder, red chili powder, ground coriander, and salt. Cook the spices for 1-2 minutes.

Step 7

Add the potato cubes and mix well to coat them with the spices.

Add 1/4 cup of water, cover the pan, and let it cook for about 15-20 minutes until the potatoes are tender. Stir occasionally to prevent sticking at the bottom.

Sprinkle garam masala and amchur powder. Mix well and cook for another 2 minutes.

Turn off the heat, add lemon juice and chopped cilantro. Mix well.

Step 11
