Wash and dry the okra thoroughly. Cut off the ends and slice them into 1-inch pieces.
Peel and dice the potatoes into small cubes.
Finely chop the onion and tomato.
Heat oil in a large non-stick pan over medium heat.
Add cumin seeds to the hot oil and let them sizzle for a few seconds until fragrant.
Add the chopped onions and sauté until they turn golden brown.
Add the chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook for 3-4 minutes until the tomatoes are soft.
Add the diced potatoes and mix well with the onion-tomato mixture. Cover the pan and cook for about 10 minutes, stirring occasionally.
Once the potatoes are partially cooked, add the okra pieces and stir well to combine.
Add salt and cover the pan again. Cook for another 10-15 minutes, stirring occasionally until the okra is tender and the potatoes are cooked through.
When the vegetables are cooked, sprinkle garam masala and mix everything gently.
Garnish with freshly chopped cilantro leaves.
Serve hot as a main dish or side dish with vegan roti or steamed rice.
