Ingredients

  • 400 grams Okra (bindi)
  • 2 medium-sized Potatoes
  • 1 medium-sized Onion
  • 1 medium-sized Tomato
  • 3 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Cilantro leaves

Directions

Step 1

Wash and dry the okra thoroughly. Cut off the ends and slice them into 1-inch pieces.

Step 2

Peel and dice the potatoes into small cubes.

Step 3

Finely chop the onion and tomato.

Step 4

Heat oil in a large non-stick pan over medium heat.

Step 5

Add cumin seeds to the hot oil and let them sizzle for a few seconds until fragrant.

Add the chopped onions and sauté until they turn golden brown.

Step 7

Add the chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook for 3-4 minutes until the tomatoes are soft.
