  • 240 ml Extra virgin olive oil

Peel the garlic cloves and slice them in half. Remove any green shoots if present as they can impart a bitter taste.

Place the garlic, aquafaba, lemon juice, and salt into a blender or food processor. Blend until the garlic is completely pureed.
