  • 2 sliced celery stalks
  • 4 cloves, minced garlic
  • 1 medium, diced zucchini
  • 1 cup, trimmed and cut into 1-inch pieces green beans
  • 3 medium, diced tomatoes
  • 6 cups vegetable broth
  • 1 15-oz can, drained and rinsed cannellini beans
  • 2 cups, packed baby spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon, freshly squeezed lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until translucent.

Stir in the carrots and celery, and sauté for another 5 minutes until slightly softened.

Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
