  • 2 whole garlic cloves, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 8 whole tortillas (flour or corn)
  • 1 whole avocado, sliced (optional)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 0.5 cup vegan sour cream (optional)

Directions

Step 1

Slice the red, green, and yellow bell peppers into thin strips. Cut the red onion into similar thin strips.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or frying pan over medium-high heat.

Add the vegan chicken strips to the pan and cook for 5-6 minutes, stirring occasionally, until browned and heated through. Remove from the pan and set aside.
