Ingredients

  • 4 pieces Veal sausages
  • 1 pound Asparagus (fresh)
  • 2 tablespoons Unsalted butter
  • 1 cup Chicken stock
  • 0.5 cup Heavy cream
  • 1 tablespoon Olive oil
  • 1 clove Garlic (minced)
  • 1 teaspoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 1 tablespoon Fresh parsley (chopped, for garnish)

Directions

Step 1

Trim and wash the asparagus. Cut off the woody ends and set 12-16 tips (about 2-inch pieces) aside for garnish. Chop the remaining asparagus into 1-inch pieces.

Step 2

Heat 1 tablespoon of butter in a large skillet over medium heat. Add the chopped asparagus (excluding the tips) and sauté for 3-4 minutes until bright green and slightly tender.

Step 3

Add the chicken stock to the skillet with the chopped asparagus. Bring to a simmer and cook for 6-8 minutes until the asparagus is very tender.

Step 4

Transfer the cooked asparagus and chicken stock to a blender. Blend until smooth. Return the mixture to the skillet over low heat, stir in the heavy cream, salt, black pepper, and lemon juice, and keep warm.
