  • 4 pieces Veal medallions
  • 150 grams Saint Andre cheese
  • 50 grams All-purpose flour
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 120 milliliters Dry white wine
  • 240 milliliters Heavy cream
  • 120 milliliters Chicken stock
  • 2 pieces Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Season the veal medallions on both sides with salt and pepper.

Step 2

Dredge the veal medallions lightly in flour, shaking off any excess flour.

Step 3

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat.

Step 4

Add the veal medallions to the skillet and cook for 2-3 minutes on each side until golden brown. Remove the veal from the skillet and set aside.
