Ingredients

  • 8 pieces Veal ribs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 1 teaspoon Fresh rosemary, chopped
  • 1 teaspoon Fresh thyme, chopped
  • 1 cup White wine
  • 1 cup Heavy cream
  • 1.5 cups Fontina cheese, shredded
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the veal ribs with salt and black pepper on both sides.

Step 3

In a large oven-safe skillet or cast-iron pan, heat the olive oil over medium-high heat.

Step 4

Sear the veal ribs on both sides until golden brown, about 2-3 minutes per side. Remove the ribs and set them aside.

Step 5

In the same skillet, lower the heat to medium and add the minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes until fragrant.

Step 6

Deglaze the pan by adding the white wine. Scrape up any browned bits from the bottom of the pan and let the wine simmer for 2-3 minutes.

Step 7

Pour in the heavy cream and stir to combine. Let the mixture simmer gently for another 2 minutes.

Step 8

Gradually add the shredded Fontina cheese to the cream sauce, stirring constantly until fully melted and smooth.

Step 9

Return the seared veal ribs to the skillet, spooning some of the sauce over the top of the ribs.

Step 10

Cover the skillet with foil or a lid and transfer it to the oven. Bake for 35-40 minutes, or until the ribs are tender.

Step 11

Remove the skillet from the oven and carefully take off the foil. Dot the top of the sauce with unsalted butter and broil the dish on high for 2-3 minutes to create a golden, bubbly crust.

Step 12

Let the dish rest for 5 minutes before serving. Garnish with chopped fresh parsley if desired.

Step 13

Serve the veal ribs hot, spooning the creamy Fontina sauce generously over the top. Pair with mashed potatoes, roasted vegetables, or your favorite side dish.
