  • 2 pounds veal shoulder, cut into 1-inch cubes
  • 3 tablespoons all-purpose flour

  • 1 large yellow onion, finely chopped
  • 2 medium carrots, peeled and diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 1 cup dry white wine
  • 2 cups chicken or veal stock
  • 1 cup diced tomatoes (canned or fresh)
  • 2 tablespoons tomato paste
  • 1 piece bay leaf
  • 4 sprigs fresh thyme sprigs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the veal cubes dry with paper towels and season with salt and black pepper.

Step 2

Dredge the veal lightly in all-purpose flour, shaking off any excess.

Step 3

Heat olive oil and butter in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Step 4

Sear the veal cubes in batches until golden brown on all sides. Remove the browned veal and set aside.

In the same pot, reduce the heat to medium and add the chopped onion, diced carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until softened.
