Ingredients

  • 4 pieces Veal cutlets
  • 3 tablespoons Olive oil
  • 3 pieces Garlic cloves
  • 1 can (14 ounces) Crushed tomatoes
  • 0.5 cup Dry white wine
  • 2 teaspoons Oregano
  • 2 tablespoons Fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes
  • 0.25 cup Parmesan cheese

Directions

Step 1

Pat the veal cutlets dry with paper towels and season both sides with salt and black pepper.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, sear the veal cutlets for 2–3 minutes on each side until golden brown. Remove and set aside.

Step 3

Reduce the heat to medium and add the remaining tablespoon of olive oil to the skillet. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.

Step 4

Pour in the white wine and deglaze the pan, scraping up any browned bits from the bottom. Let the wine reduce by half, about 2–3 minutes.

Step 5

Stir in the crushed tomatoes, oregano, red pepper flakes (if using), and a pinch of salt. Simmer the sauce for 5 minutes, allowing the flavors to meld.

Step 6

Return the veal cutlets to the skillet, nestling them into the sauce. Cover the skillet with a lid and let the veal simmer in the sauce for 15–20 minutes, turning once halfway through.

Step 7

Add the chopped basil to the sauce during the last 5 minutes of cooking and adjust seasoning with additional salt and pepper if needed.
