Preheat your oven to 375°F (190°C). Grease a standard loaf pan with butter or cooking spray and set aside.
In a large mixing bowl, combine the ground veal, breadcrumbs, Parmesan cheese, milk, eggs, minced garlic, parsley, lemon zest, salt, and pepper. Mix gently with your hands or a spatula until fully combined, being careful not to overmix.
