  • 1 medium sweet potato (peeled and cut into chunks)
  • 2 medium zucchini (sliced into rounds)
  • 0.5 cup dried apricots (chopped)
  • 2 tablespoons fresh cilantro (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Heat olive oil in a large skillet over medium-high heat.
