  • 4 pieces (about 150g each) Veal medallions
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons All-purpose flour
  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 medium Shallots, finely chopped
  • 2 cloves Garlic, minced
  • 200 grams Cremini mushrooms, sliced
  • 0.5 cup White wine
  • 1 cup Veal or chicken stock
  • 0.5 cup Heavy cream
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Season the veal medallions on both sides with salt and black pepper. Lightly dust them with flour, shaking off any excess.

Step 2

In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat. Sear the veal medallions for 2-3 minutes on each side until golden brown. Remove them from the pan and set aside.

Step 3

Lower the heat to medium and add the remaining 1 tablespoon of butter. Add the chopped shallots and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
