Ingredients

  • 4 pieces veal chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 2 large yellow onions
  • 1 teaspoon sugar
  • 2 cloves garlic
  • 1 cup heavy cream
  • 4 ounces Stilton cheese (crumbled)
  • 1 teaspoon fresh thyme leaves

Directions

Step 1

Season the veal chops on both sides with salt and black pepper. Set aside to come to room temperature while preparing the other ingredients.

Step 2

Peel and thinly slice the yellow onions. Mince the garlic cloves.

Step 3

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 10 minutes until they begin to soften.

Step 4

Sprinkle 1 teaspoon of sugar over the onions, reduce heat to low, and continue cooking for an additional 15-20 minutes, stirring occasionally, until the onions are golden and caramelized. Remove the onions from the skillet and set aside.

Step 5

In the same skillet, heat the remaining tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Add the veal chops and sear for 3-4 minutes on each side until golden brown and cooked to your desired doneness (internal temperature should be about 145°F for medium-rare). Remove the veal chops from the skillet, tent with aluminum foil, and let rest.

Step 6

Reduce the heat to medium and add the remaining tablespoon of butter and the minced garlic to the skillet. Cook for 1 minute until fragrant, being careful not to burn the garlic.

Step 7

Pour in the heavy cream, scraping up any browned bits from the bottom of the skillet, and bring to a gentle simmer. Stir in the crumbled Stilton cheese and fresh thyme leaves, whisking until the cheese is melted and the sauce is smooth and creamy. Season with additional salt and pepper to taste.

Step 8

To serve, place the veal chops on plates, spoon the caramelized onions on top, and drizzle with the Stilton sauce. Garnish with additional thyme leaves if desired.
