  • 1 large sweet potato, peeled and diced
  • 1 cup cooked red lentils
  • 4 cups vegetable broth
  • 0.5 cup coconut milk
  • 1 teaspoon sea salt
  • 0.25 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice

Directions

Step 1

In a large pot, heat the ghee over medium heat.

Step 2

Add the cumin seeds and let them sizzle for about 30 seconds until aromatic.

Stir in the grated ginger, turmeric powder, and ground coriander, and cook for 1 minute to release the flavors.
