In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the egg. Gradually add the water while mixing the dough by hand or with a spoon until a rough dough forms.
Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.
Peel and chop the potatoes into small cubes. Place them in a pot with salted water and bring to a boil. Cook for about 15 minutes or until the potatoes are fork-tender.
While the potatoes cook, finely dice the onion. Heat the butter in a skillet over medium heat and sauté the onion until golden brown, about 5-7 minutes.

Bring a large pot of salted water to a gentle boil. Drop the vareniki in batches into the water and cook for 3-5 minutes, or until they float to the surface. Remove using a slotted spoon.
