  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Coconut oil (melted)
  • 0.5 cup Brown sugar or coconut sugar
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 0.5 cup Dark chocolate chips or raisins
  • 0.25 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium mixing bowl, whisk together the rolled oats, whole wheat flour, baking soda, cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, beat together the applesauce, melted coconut oil, and brown sugar until smooth. Add in the vanilla extract and the egg, mixing until well combined.
