Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, cold and cubed
  • 0.5 cup Heavy cream, plus extra for brushing
  • 1.5 teaspoons Vanilla extract
  • 1 large Egg
  • 2 tablespoons Coarse sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the heavy cream, vanilla extract, and egg until well combined.

Step 5

Gradually pour the wet ingredients into the dry ingredients, stirring gently with a wooden spoon until a slightly sticky dough forms. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface and gently knead it just until it comes together, about 4–5 times.

Step 7

Pat the dough into a 1-inch thick round and cut it into 8 equal wedges.

Step 8

Place the wedges onto the prepared baking sheet, spacing them slightly apart.

Step 9

Brush the tops of the scones with a bit of heavy cream and sprinkle with coarse sugar, if desired.

Step 10

Bake in the preheated oven for 16–18 minutes, or until the tops are golden brown.

Step 11

Allow the scones to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.

Step 12

Serve warm with butter, jam, or clotted cream.
