Ingredients

  • 3 pieces ripe pears
  • 1 cup fresh raspberries
  • 0.5 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 pod vanilla bean
  • 2 tablespoons water

Directions

Step 1

Peel, core, and dice the pears into small chunks. Set aside.

Step 2

Split the vanilla bean lengthwise and scrape out the seeds using the back of a knife. Reserve both the seeds and the pod.

Step 3

In a medium-sized saucepan, combine the diced pears, granulated sugar, lemon juice, lemon zest, vanilla seeds, vanilla pod, and water.

Step 4

Cook the mixture over medium heat, stirring occasionally, until the pears begin to soften, about 10-12 minutes.

Step 5

Add the fresh raspberries to the saucepan and gently stir to combine.

Step 6

Reduce the heat to low and allow the mixture to simmer for an additional 10-15 minutes, stirring occasionally, until the pears are tender and the relish thickens slightly.

Step 7

Remove the vanilla pod and discard it.

Step 8

Taste and adjust sweetness with more sugar or a splash of lemon juice, if desired.

Step 9

Let the relish cool to room temperature before serving or store it in an airtight container in the refrigerator for up to one week.
