Ingredients

  • 1 whole Honeydew melon
  • 1 cup Fresh blueberries
  • 1 whole Vanilla bean
  • 2 tablespoons Honey
  • 2 tablespoons Fresh mint leaves
  • 1 tablespoon Lime juice

Directions

Step 1

Cut the honeydew melon in half and remove the seeds using a spoon. Slice away the rind and cut the flesh into bite-sized cubes.

Place the honeydew melon cubes and fresh blueberries into a large mixing bowl.

Slice the vanilla bean lengthwise and scrape out the seeds using the back of a knife. Reserve the seeds for the dressing.
