  • 2 tablespoons Cornstarch
  • 0.125 teaspoon Salt
  • 3 large Egg yolks
  • 3 tablespoons Unsalted butter
  • 2 teaspoons Vanilla extract

Directions

Step 1

In a medium saucepan, combine the whole milk, granulated sugar, cornstarch, and salt. Whisk the ingredients together until the mixture is smooth and free from lumps.

Step 2

Place the saucepan over medium heat and cook, whisking constantly, until the mixture begins to thicken and bubble. This will take about 5–7 minutes.

Step 3

In a separate bowl, whisk the egg yolks until smooth. Slowly pour about 1/2 cup of the hot milk mixture into the egg yolks, whisking constantly to temper the eggs.

Step 4

Return the tempered egg yolk mixture to the saucepan. Continue cooking over medium-low heat for another 2–3 minutes, stirring constantly, until the pudding thickens further.

Step 5

Remove the saucepan from heat and immediately whisk in the unsalted butter and vanilla extract until fully incorporated.

Step 6

Transfer the pudding to a heatproof bowl. Cover the surface with plastic wrap (pressing the plastic wrap directly onto the surface of the pudding to prevent a skin from forming). Let it cool to room temperature or refrigerate until fully chilled before using as a pastry filling.
