Ingredients

  • 1/2 cup Popcorn kernels
  • 2 tablespoons Vegetable oil
  • 1/4 cup Unsalted butter
  • 1/2 cup Granulated sugar
  • 2 tablespoons Light corn syrup
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt

Directions

Step 1

Heat 2 tablespoons of vegetable oil in a large, heavy-bottomed pot over medium-high heat. Add 1/2 cup of popcorn kernels and cover the pot with a lid, leaving it slightly ajar to allow steam to escape.

Step 2

Shake the pot occasionally to prevent the kernels from burning. Once the popping slows down to about 2-3 seconds between pops, remove the pot from heat.

Step 3

Transfer the freshly popped popcorn to a large mixing bowl, removing any unpopped kernels, and set aside.

Step 4

In a small saucepan, melt 1/4 cup unsalted butter over medium heat. Stir in 1/2 cup granulated sugar, 2 tablespoons light corn syrup, and 1/4 teaspoon salt.

Step 5

Bring the mixture to a gentle boil while stirring constantly. Once it begins to bubble, reduce the heat to low and continue stirring for 2-3 minutes until the mixture thickens slightly.

Step 6

Remove the saucepan from heat and quickly stir in 1 teaspoon of vanilla extract.

Step 7

Pour the warm vanilla glaze evenly over the prepared popcorn in the mixing bowl. Use a spatula to gently toss the popcorn, ensuring each piece is evenly coated.

Step 8

Spread the coated popcorn onto a parchment-lined baking sheet to cool and set for about 10-15 minutes.

Step 9

Once the glaze has hardened slightly, transfer the vanilla popcorn to a bowl and enjoy!
