Ingredients

  • 1 whole Pineapple (fresh, peeled and cored)
  • 100 grams Granulated sugar
  • 250 milliliters Water
  • 1 whole Vanilla bean (or vanilla extract)
  • 15 milliliters Lemon juice (freshly squeezed)
  • 1 pinch Salt

Directions

Step 1

Peel and core the pineapple, then cut it into small chunks (about 1-inch pieces). Set aside.

Step 2

In a medium saucepan, combine the granulated sugar, water, and salt. If using a vanilla bean, split it lengthwise and scrape out the seeds. Add both the seeds and pod to the saucepan. If using vanilla extract, omit it for now and add it later.

Step 3

Set the saucepan over medium heat and stir until the sugar dissolves completely, forming a syrup.

Step 4

Add the pineapple chunks to the saucepan and reduce the heat to low. Let the pineapple simmer gently in the syrup for 20-25 minutes, stirring occasionally, until the pineapple is tender and infused with the vanilla flavor.
