Ingredients

  • 4 pieces Pears (ripe but firm, preferably Bosc or Anjou)
  • 4 cups Water
  • 1 cup Granulated sugar
  • 1 piece Vanilla bean (or 1 tablespoon vanilla extract)
  • 1 piece Lemon (zested and juiced)
  • 1 piece Cinnamon stick (optional)

Directions

Step 1

Peel the pears, leaving the stem intact. Trim the bottom of each pear slightly so they can stand upright if desired.

Step 2

In a medium saucepan, combine water, sugar, and lemon zest. If using a vanilla bean, slice it lengthwise and scrape out the seeds; add both the seeds and the pod to the saucepan. Alternatively, add the vanilla extract if using. Add the cinnamon stick if desired.

Step 3

Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the syrup comes to a gentle boil.

Step 4

Lower the heat to a simmer and carefully place the pears into the saucepan. Add the lemon juice to the syrup.
