Cut the peeled and cored pineapple into small, bite-sized chunks and set aside.
Place a medium saucepan over medium heat. Add the sugar, water, and the vanilla bean seeds along with the scraped pod.
Cook the sugar mixture until the sugar has dissolved completely and starts to form a light syrup, about 3-4 minutes.
