Ingredients

  • 180 grams rolled oats
  • 120 grams all-purpose flour
  • 115 grams unsalted butter
  • 100 grams granulated sugar
  • 75 grams light brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to beat the unsalted butter, granulated sugar, and light brown sugar until light and creamy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the butter-sugar mixture. Beat until fully incorporated.

Step 5

Gradually add the dry oat-flour mixture to the wet ingredients. Mix until just combined. Do not overmix.

Step 6

Using a tablespoon or small cookie scoop, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. The center may still look slightly underbaked, but this will give the cookies a chewy texture.

Step 8

Remove the cookies from the oven and let them rest on the baking sheets for 5 minutes. Then, transfer them to a wire rack to cool completely.

Step 9

Serve the cookies once cooled, and store any leftovers in an airtight container for up to a week.
