Ingredients

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 0.5 cups Granulated sugar
  • 1 whole Vanilla bean
  • 1 packet Unflavored gelatin
  • 3 tablespoons Cold water
  • 2 cups Mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Powdered sugar

Directions

Step 1

Pour the cold water into a small bowl and sprinkle the unflavored gelatin over it. Let it bloom for 5-10 minutes.

Step 2

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Slice the vanilla bean lengthwise, scrape the seeds, and add both the seeds and the pod to the saucepan.

Heat the mixture over medium heat, stirring occasionally, until it is hot but not boiling.

Remove the saucepan from the heat. Add the bloomed gelatin to the mixture and whisk until the gelatin is completely dissolved.

Strain the mixture through a fine-mesh sieve into a pouring jug to remove the vanilla pod and any undissolved bits.
