  • 1 cup Coconut milk
  • 0.5 cup Granulated sugar

  • 1 packet Unflavored gelatin
  • 3 tablespoons Cold water
  • 1 Zest of lime
  • 0.25 cup Toasted coconut flakes
  • 1 Fresh lime slices (optional, for garnish)

Directions

Step 1

In a small bowl, sprinkle the unflavored gelatin over the cold water and let it bloom (hydrate) for about 5 minutes.

In a medium saucepan, combine the heavy cream, coconut milk, and granulated sugar. If using a vanilla bean, split it lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan. (If using vanilla extract, add it later.)

Heat the cream mixture over medium heat, stirring occasionally, until it is hot but not boiling, and the sugar is fully dissolved.

Remove the saucepan from the heat and stir in the bloomed gelatin until completely dissolved. If using vanilla extract instead of a vanilla bean, add it now.

Stir in the lime zest for a burst of fresh citrus flavor.

Strain the mixture through a fine-mesh sieve to remove any undissolved gelatin or vanilla pod remnants.
